Our friends Mandy and Jenni hosted a Christmas seasonal classic: a cookie exchange complete with eggnog and a viewing of White Christmas.
Here's the recipe for my Chocolate Cranberry Cookies:
24 oz semisweet chocolate chips
1c butter, softened
1c packed brown sugar
1 tsp vanilla
2 eggs
2 1/2 c flour
1 1/2 tsp baking soda
1/2 tsp salt
6 oz white chocolate chips/chunks
6 oz cranberries
6 oz macadamia nuts, pecans, or walnuts (optional)
Heat oven to 350. Melt 1 1/2 c semisweet chips in the microwave or a saucepan on low heat. Beat butter, brown sugar, and vanilla together with electric mixer, then add eggs and melted chocolate and beat until fluffy. Stir in flour, baking soda, and salt. Stir in remaining chocolate chips, white chips, cranberries, and nuts. Drop dough by 1/4 cupfuls 2 inches apart onto ungreased cookie sheet. Bake 12-14 minutes until set (centers will appear soft and moist). Cool 1-2 minutes on pan, then move cookies to wire rack.
